The Classic II and Big Joe II have a 2-tier cooking grid with multi-level racks. On the other hand, the Classic III and Big Joe III have a 3-tier cooking grid with multi-level racks. It allows cooking at 2 or 3 different levels, simultaneously, thus increasing the cooking space. With a grill expander [optional] food can be cooked at extra levels.
The halved KJ heat deflectors allow creating diverse heat zones inside the grill for direct and indirect cooking. Install the half heat deflector on the lower level and cooking grate on the upper level for cooking vegetables with indirect heat. Simultaneously, install a half grate on a low level to directly cook the meat.
As optional, KJ offers interchangeable half-moon cooking surfaces in a variety of styles including soapstone, cast iron reversible griddle, cast iron cooking grate, stainless steel cooking grate, ceramic pizza stone, and fish & vegetable grate.
The grill includes a deflector plate for setting multiple heat zones. It means simultaneously cooking different foods at diverse temperatures on separate surfaces with different styles on KJ 2nd and 3rd generation. It sounds ambitious doing everything at once. The flexibility and versatility to change between different cooking styles with ease is an unquestionable luxury.
On top of that Kamado Joe has introduced a patented airlift hinge system. Ceramic grills are heavy, so a lot of force is needed to open the lid and closing needs extra care to avoid damage to the grill. Kamado Joe designers resolved this issue by introducing an airlift hinge system that opens the heavy lid with one finger. While closing the lid it naturally goes down slowly and safely, so the concerns about slamming shut damages are eliminated.
Kamado Joe introduced a fiberglass gasket, which ensures an airtight seal, as well as longer shelf life than competitors using inferior quality, felt gaskets. Features like heat deflector plates, folding side tables, and rolling carts are included in the base price, which many competitors charge extra.
